We do not use any artificial coloring, only natural ingredients. Tomato and chard for the reds for example, spinach or nettles for the greens, turmeric and saffron for the the yellows and squid ink for the blacks.

After performing the cutting of the cascade of pasta, processing proceeds with an ancient and wise gesture made by our team of pasta maker, a hand that forms the skein placing it on the frames and then go in drying.
Latest generation automations…
Short pasta followed a fully automated process, from mixing, extrusion or rolling, until the installation on the frames, with modern machines. All this is, however, strictly calibrated, measured and controlled by our staff always thorough inspection before last of the packaging.
